feat(lsp): show server version in `:checkhealth` #31611

Problem:
Language server version information missing from `:checkhealth vim.lsp`.

Solution:
Store `InitializeResult.serverInfo.version` from the `initialize`
response and display for each client in `:checkhealth vim.lsp`.
